Parsley
Parsley is said to be the world's most popular herb, adding subtle flavour and colour to a wide array of dishes including homemade sauces, meat and vegetable stews and casseroles, pâté, salad dressings, omellettes, soups, and many potato and fish dishes.
Rosemary
Rosemary is a highly aromatic herb that is often used in traditional Mediterranean cuisine, adding an astringent taste which complements a wide variety of ingredients. Use rosemary to add flavour to oven roasted potatoes, homemade bread, tomato sauces and soups, roast lamb and oily fish. Rosemary is also used in stuffing, apple jams and jellies.
Thyme
Thyme ("teim" in Welsh) is a heady, flavoursome culinary and medicinal herb which has been used throughout the centuries to treat a whole multitude of ailments - from soothing coughs and cleansing wounds to giving people greater courage. Its popularity in Europe is believed to have come about thanks to the Romans, who used it to add aromatic flavour to cheese.
Nowadays thyme is widely used in cooking, and its intense, pungent flavour works well with most meats (particularly lamb). It is a good complement to many soups and slow-cooked stews, and is often used in stuffing for lamb or poultry. Thyme is also an essential component of a bouquet garni, used frequently in French cuisine.
Despite being packed with flavour and fragrance, thyme is very versatile because it also blends well with other herbs such as rosemary and sage, and is a good source of iron.
These organic dried herbs are packaged in an airtight glass jar to retain maximum freshness.
Basil
Basil ("brenhinllys" in Welsh) is a tasty, aromatic culinary herb which features prominently in Southern European cookery. Regarded as a symbol of love in present-day Italy, basil is perfect for adding to tomato-based pasta sauces and soups and is an essential ingredient for pesto.
Oregano
Oregano is a wonderfully fragrant herb whose leaves are even more flavoursome when dried than when they are used fresh. Oregano can be used to add an aromatic, pungent flavour to meat, vegetable dishes and other foods such as sauces, soups and stews. Oregano together with basil contributes a great deal of the distinctive character of many Italian dishes. Oregano is also widely used in Turkish, Palestinian, Syrian, Greek, Portuguese, Spanish and Latin American cuisine.
Sage
Sage has a long history of medicinal and culinary use, adding a peppery flavour to dishes. It's often used in British recipes including Lincolnshire sausages, poultry or pork stuffing, and various sauces. It is also used in some Italian and Middle Eastern dishes.
