Thyme

Thyme ("teim" in Welsh) is a heady, flavoursome culinary and medicinal herb which has been used throughout the centuries to treat a whole multitude of ailments - from soothing coughs and cleansing wounds to giving people greater courage. Its popularity in Europe is believed to have come about thanks to the Romans, who used it to add aromatic flavour to cheese.
Nowadays thyme is widely used in cooking, and its intense, pungent flavour works well with most meats (particularly lamb). It is a good complement to many soups and slow-cooked stews, and is often used in stuffing for lamb or poultry. Thyme is also an essential component of a bouquet garni, used frequently in French cuisine.

Despite being packed with flavour and fragrance, thyme is very versatile because it also blends well with other herbs such as rosemary and sage, and is a good source of iron.
